Cheap and Easy Family Dinner: Salmon Pasta
Food prices have gone up AGAIN… so many people are finding themselves needing to cut corners in every area. I began a series of cupboard use up meals over on TikTok and they were really well received. So I have challenged myself to make a series of cheap and easy dinner recipes for families, for under £5 in total.
So cheap and easy, it costs less than £1
Lots of us are having to be super savvy when food shopping. I ALWAYS have a meal plan and I try to buy items which can be used again in other meals. Before the cost of living crisis, I would have been much more frivolous and used a whole tub of creme fraiche. But actually I only needed half and the rest was used in a mushroom stroganoff.
It might be a cheap and easy recipe, but electricity costs too much.
I posted a money saving cake bar recipe on TikTok, and was shocked with the amount of comments discussing how much energy the oven took to cook them. I realised then, that I am not the only one worried about turning my oven on. Luckily, this recipe is completely oven free! I used the hob to cook the pasta and broccoli. Then, I used the air fryer to cook the salmon and garlic bread.
I wrapped the salmon in tin foil with some olive oil and left for ten minutes in the air fryer. It shocks me at just how much quicker the air fryer is! My salmon was completely frozen too! If you are more organised than me, you could also cook the salmon in the slow cooker using the same method.
Our air fryer isn't huge, so I did have to break the garlic bread in half before popping it in. I cooked the garlic bread on 140 for 6 minutes. I made the mistake of cooking it on a higher setting before and the outside burnt and the inside was still cold. So make sure you are cooking at a lower heat setting.

It really is that easy! Basically... just cook it all and mix it together with some creme fraiche! You might want to add some cheese or seasoning too. We had easily enough for four portions... probably even five if we needed it! We are a family of three, but I often make enough for 4 and have leftovers for lunch the next day.
