The budget Aldi meal plan

I sometimes get asked why I only meal plan five days of the week. I know lots of people who meal plan for 7 and it works for them. But I find meal planning for 5 days gives us some leeway the other two days. Sometimes we go to my parents, have leftovers or end up with beans on toast.

What do I need to get from Aldi?

Meal one: fish finger pie

Yes... you heard that right! I made my first ever fish finger fish pie and WOW...  I can't believe I have spent 24 years without this in my life! It is literally fish fingers, beans, mash and cheese. I will definitely be making this a staple in our household!

Meal two: sausage jambalaya

I haven't had jambalaya for years... then suddenly I had a craving for it! So I made my own budget friendly version and it turned out great! It is a great meal to mix things up a little if you are bored of the same old meals.

Meal three: Spinach and Ricotta Cannelloni

Meal four: soy salmon bowl

I often use rice in my meal plans because a bag of rice can go so far! For only 48p a bag, you can use it for so many meals! You will often see rice or potatoes used frequently in my meal plans as they are both so cheap and versatile.

Meal five: sausage casserole

Sausage casserole is so easy to make in the slow cooker! It is one of our winter essentials. It is so cheap to make and requires minimal effort so its a win win!
